Butter one side of each bread slice (or smear mayo). Place one slice butter-side down. Stack cheese. Top with the second slice, butter-side up.
Heat a skillet over medium-low. Too hot and the bread burns before the cheese melts. Set the sandwich in the dry pan.
Cook 3–4 minutes until the underside is deep golden. Press gently with a spatula. Peek before you flip.
Flip and cook 3 minutes more. If the cheese is lagging, cover the pan 30 seconds or drop the heat. The center should be fully melted, not just warm.
Let it sit 1 minute so the cheese does not flood out. Cut diagonally. Tomato soup on the side if you have a can.
