Heat the oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no pink remains, about 6-7 minutes. Drain off excess fat.

Stir in the taco seasoning and water. Simmer, stirring occasionally, until the sauce thickens and coats the meat, about 3-4 minutes.

Warm the tortillas

Meanwhile, warm the tortillas in a dry skillet or directly over a gas flame for 30 seconds per side until soft and lightly charred.

Spoon the seasoned beef into the tortillas and top with lettuce, tomatoes, cheese, red onion, a dollop of sour cream, and a squeeze of lime. Serve immediately.
