  • green onions cut into 1-inch lengths
  • soy sauce
  • mirin
  • sake
  • sugar
  • skewers

Instructions

  1. 1Soak bamboo skewers in water for 30 minutes to prevent burning.
  2. 2Simmer soy sauce, mirin, sake, and sugar in a saucepan until it thickens into a glossy yakitori sauce.
  3. 3Thread chicken cubes and green onion pieces alternately onto skewers.
  4. 4Grill or broil skewers for 4-5 minutes per side, brushing with yakitori sauce in the final minutes of cooking.
