Vegetable Samosas

Flaky pastry envelopes stuffed with a spiced potato and green pea hash, flavored with toasted cumin and coriander.

Ingredients

  • samosa pastry sheets
  • potatoes boiled and cubed
  • green peas
  • garam masala
  • cumin seeds
  • coriander powder
  • ginger-garlic paste
  • green chilies finely chopped
  • oil for frying

Instructions

  1. 1Sauté cumin seeds, ginger-garlic paste, and green chilies in a pan until aromatic.
  2. 2Add boiled cubed potatoes, peas, garam masala, coriander, turmeric, and salt. Sauté for 5 minutes and let cool.
  3. 3Fold pastry sheets into cones, fill with potato mixture, and seal the edges with a flour-water paste.
  4. 4Deep fry in medium-hot oil (325°F/160°C) for 8-10 minutes until golden brown and crispy.
  5. 5Serve hot with fresh mint-cilantro chutney.
