Vegetable Samosas
Flaky pastry envelopes stuffed with a spiced potato and green pea hash, flavored with toasted cumin and coriander.

- •samosa pastry sheets
- •potatoes boiled and cubed
- •green peas
- •garam masala
- •cumin seeds
- •coriander powder
- •ginger-garlic paste
- •green chilies finely chopped
- •oil for frying
Instructions
- 1Sauté cumin seeds, ginger-garlic paste, and green chilies in a pan until aromatic.
- 2Add boiled cubed potatoes, peas, garam masala, coriander, turmeric, and salt. Sauté for 5 minutes and let cool.
- 3Fold pastry sheets into cones, fill with potato mixture, and seal the edges with a flour-water paste.
- 4Deep fry in medium-hot oil (325°F/160°C) for 8-10 minutes until golden brown and crispy.
- 5Serve hot with fresh mint-cilantro chutney.
