Slice the beef across the grain into thin strips (if not pre-sliced). Thinly slice the onion, grate the ginger, and chop the green onions. Beat the eggs in a small bowl and season with a pinch of salt and white pepper.

Cook the Beef and Onions

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the sliced onion and cook until softened and translucent, about 3 minutes. Add the beef strips and stir-fry until just browned, about 2 minutes. Pour in the soy sauce, mirin, sake, grated ginger, and sugar. Simmer, stirring occasionally, until the sauce thickens and glazes the beef, about 3 minutes. If the sauce becomes too thick, add a splash of water.

In a separate non-stick skillet, heat the remaining 1 tablespoon of oil over medium-low heat. Pour in the beaten eggs and let them set for about 10 seconds. Using a rubber spatula, gently push the cooked edges toward the center, tilting the pan to let uncooked egg flow to the edges. Continue until the eggs are softly set but still glossy and creamy, about 1–2 minutes. Remove from heat immediately.
