Instructions

  1. 1Cook sliced potatoes and onions in olive oil on low heat until soft but not browned; drain oil.
  2. 2Whisk eggs in a bowl, then fold in the warm potatoes and onions.
  3. 3Pour the mixture back into a hot skillet with a splash of oil.
  4. 4Cook on medium-low for 5 minutes, flip using a plate, and cook the other side for 4 minutes.
