Tom Yum Soup

Hot and sour Thai soup with shrimp, lemongrass, kaffir lime leaves, and galangal.

Ingredients

  • shrimp peeled
  • lemongrass bruised
  • kaffir lime leaves
  • galangal sliced
  • thai chili paste
  • fish sauce
  • lime juice
  • straw mushrooms

Instructions

  1. 1Bring water or chicken broth to a boil with lemongrass, lime leaves, and galangal.
  2. 2Add mushrooms and chili paste, simmer for 5 minutes.
  3. 3Add shrimp and cook for 2-3 minutes until pink.
  4. 4Turn off heat, stir in fish sauce and lime juice. Garnish with cilantro.
