Tom Yum Soup
Hot and sour Thai soup with shrimp, lemongrass, kaffir lime leaves, and galangal.

- •shrimp peeled
- •lemongrass bruised
- •kaffir lime leaves
- •galangal sliced
- •thai chili paste
- •fish sauce
- •lime juice
- •straw mushrooms
Instructions
- 1Bring water or chicken broth to a boil with lemongrass, lime leaves, and galangal.
- 2Add mushrooms and chili paste, simmer for 5 minutes.
- 3Add shrimp and cook for 2-3 minutes until pink.
- 4Turn off heat, stir in fish sauce and lime juice. Garnish with cilantro.
