Tom Kha Gai (Coconut Soup)

Ingredients

  • chicken breast sliced
  • coconut milk
  • chicken broth
  • galangal sliced
  • lemongrass bruised
  • lime juice
  • fish sauce
  • mushrooms

Instructions

  1. 1Simmer chicken broth, galangal, and lemongrass in a pot for 5 minutes.
  2. 2Stir in coconut milk, sliced chicken, and mushrooms.
  3. 3Simmer for 8 minutes until chicken is fully cooked.
  4. 4Turn off heat and stir in fish sauce and fresh lime juice.
  5. 5Garnish with sliced red chilies and cilantro.
