Tempura Shrimp & Vegetables

Lightly battered, crispy deep-fried shrimp and seasonal vegetables, served with tentsuyu dip.

Ingredients

Provided

  • shrimp peeled and stretched
  • sweet potato and zucchini sliced
  • cake flour
  • egg yolk
  • ice cold sparkling water
  • vegetable oil for frying

Instructions

  1. 1Mix egg yolk and ice-cold water, then gently stir in cake flour. Leave batter lumpy (do not overmix).
  2. 2Heat frying oil to 340°F (170°C).
  3. 3Dreadge shrimp and vegetable slices in dry flour, dip into the ice-cold batter, and drop in hot oil.
  4. 4Fry for 2-3 minutes until light golden and crispy. Drain and serve immediately with dipping sauce.
