Tempura Shrimp & Vegetables
Lightly battered, crispy deep-fried shrimp and seasonal vegetables, served with tentsuyu dip.

Ingredients
Provided
- •shrimp peeled and stretched
- •sweet potato and zucchini sliced
- •cake flour
- •egg yolk
- •ice cold sparkling water
- •vegetable oil for frying
Instructions
- 1Mix egg yolk and ice-cold water, then gently stir in cake flour. Leave batter lumpy (do not overmix).
- 2Heat frying oil to 340°F (170°C).
- 3Dreadge shrimp and vegetable slices in dry flour, dip into the ice-cold batter, and drop in hot oil.
- 4Fry for 2-3 minutes until light golden and crispy. Drain and serve immediately with dipping sauce.
