Tarta de Santiago (Almond Cake)

Traditional Spanish cake made with ground almonds, eggs, and sugar, flavored with lemon zest.

  • eggs
  • sugar
  • lemon zest
  • powdered sugar for dusting

Instructions

  1. 1Whisk eggs and sugar until thick and pale.
  2. 2Gently fold in ground almonds and grated lemon zest.
  3. 3Pour butter into a greased baking pan.
  4. 4Bake at 350°F (175°C) for 30 minutes until golden.
  5. 5Let cool, place a template of the Cross of Saint James on top, dust with powdered sugar, and remove template.
