Tarta de Santiago (Almond Cake)
Traditional Spanish cake made with ground almonds, eggs, and sugar, flavored with lemon zest.

- •sugar
- •lemon zest
- •powdered sugar for dusting
Instructions
- 1Whisk eggs and sugar until thick and pale.
- 2Gently fold in ground almonds and grated lemon zest.
- 3Pour butter into a greased baking pan.
- 4Bake at 350°F (175°C) for 30 minutes until golden.
- 5Let cool, place a template of the Cross of Saint James on top, dust with powdered sugar, and remove template.
