Sweet Potato Glass Noodles (Japchae)

Korean glass noodles stir-fried with sesame oil, spinach, mushrooms, carrots, and beef.

Ingredients

  • dangmyeon (sweet potato starch noodles)
  • spinach
  • carrots julienned
  • shiitake mushrooms
  • ribeye beef strips
  • soy sauce
  • sesame oil
  • sugar

Instructions

  1. 1Boil glass noodles for 7 minutes, drain, and toss with sesame oil.
  2. 2Blanch spinach and sauté carrots and mushrooms separately.
  3. 3Stir-fry beef strips with garlic, soy sauce, and sugar.
  4. 4Combine noodles, cooked vegetables, and beef in a large bowl.
  5. 5Pour a mixture of soy sauce, sugar, and sesame oil over the ingredients, tossing to coat. Garnish with sesame seeds.
