Sweet Potato Glass Noodles (Japchae)
Korean glass noodles stir-fried with sesame oil, spinach, mushrooms, carrots, and beef.

- •dangmyeon (sweet potato starch noodles)
- •spinach
- •carrots julienned
- •shiitake mushrooms
- •ribeye beef strips
- •soy sauce
- •sesame oil
- •sugar
Instructions
- 1Boil glass noodles for 7 minutes, drain, and toss with sesame oil.
- 2Blanch spinach and sauté carrots and mushrooms separately.
- 3Stir-fry beef strips with garlic, soy sauce, and sugar.
- 4Combine noodles, cooked vegetables, and beef in a large bowl.
- 5Pour a mixture of soy sauce, sugar, and sesame oil over the ingredients, tossing to coat. Garnish with sesame seeds.
