Sticky Toffee Pudding

A rich sponge cake made with chopped dates, covered in a sweet warm toffee sauce.

Ingredients

Provided

  • dried dates chopped
  • boiling water
  • baking soda
  • butter
  • brown sugar
  • flour
  • eggs
  • heavy cream

Instructions

  1. 1Soak dates in boiling water with baking soda until soft, then puree.
  2. 2Cream butter and brown sugar, beat in eggs, then fold in flour and date puree.
  3. 3Pour into baking cups and bake at 350°F (175°C) for 25 minutes.
  4. 4Make sauce: boil butter, brown sugar, and heavy cream together until sticky.
  5. 5Poke holes in warm puddings, pour the toffee sauce over them, and serve.
