Cook the Noodles
Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package directions until al dente, about 6-8 minutes. Drain well, then toss with 1 teaspoon of vegetable oil to prevent sticking. Set aside.
Sear and Glaze the Chicken
Heat the remaining vegetable oil in a large wok or skillet over high heat until shimmering. Add the chicken pieces in a single layer and sear without moving for 2 minutes until golden brown. Flip and cook another 2 minutes. Reduce heat to medium, add garlic and ginger, and stir-fry for 30 seconds until fragrant. In a small bowl, mix soy sauce, brown sugar, and sesame oil; pour over the chicken and toss to coat. Cook for 1 minute until the sauce thickens and glazes the chicken.
Scramble the Eggs

Finish and Serve
