Prepare the Pork
Pat the pork shoulder completely dry using paper towels. Rub the olive oil evenly over the entire surface. In a small bowl, combine the brown sugar, smoked paprika, garlic powder, onion powder, cumin, chili powder, salt, and black pepper. Massage the seasoning generously over every side of the pork, pressing it into the meat.
For maximum flavor, season the pork the night before and refrigerate it uncovered overnight.
Build the Cooking Base
Arrange the sliced onions and smashed garlic in the bottom of a slow cooker or Dutch oven. Pour in the apple cider vinegar, chicken broth, and Worcestershire sauce. Place the seasoned pork shoulder on top of the vegetables, fat side facing upward so the rendered fat naturally bastes the meat during cooking.
Slow Cook
Cook on LOW for approximately 8 hours, or until the pork is extremely tender and easily pulls apart with two forks. If using a Dutch oven, cover tightly and cook in a 300°F (150°C) oven for 6 to 7 hours.
Resist opening the lid frequently, as each peek releases heat and can significantly extend the cooking time.
Rest the Pork
Transfer the cooked pork to a large cutting board or tray and allow it to rest for 15 minutes. Resting helps the meat retain more of its flavorful juices before shredding.
Reduce the Cooking Liquid
Strain the cooking liquid into a saucepan, discarding the onions and garlic if desired. Simmer over medium heat for 10 to 15 minutes until slightly reduced and concentrated. Skim off excess fat from the surface for a cleaner, richer sauce.
Shred the Pork
Using two forks or meat claws, shred the pork into bite-sized pieces, discarding any large pieces of fat and the bone. The meat should separate effortlessly if it has cooked long enough.
Shred the pork while it's still warm for the easiest and cleanest results.
Mix with Sauce
Return the shredded pork to the slow cooker or a large mixing bowl. Pour the reduced cooking juices and Carolina-style barbecue sauce over the meat, tossing gently until every strand is evenly coated and juicy. Let the pork sit for 10 minutes so it absorbs the flavorful sauce.
Toast the Buns
If serving as sandwiches, lightly butter the brioche buns and toast them in a skillet or under the broiler until golden. Toasted buns provide extra texture and prevent them from becoming soggy.
Serve
Pile generous portions of pulled pork onto toasted brioche buns and top with creamy coleslaw. Serve with baked beans, macaroni and cheese, potato salad, cornbread, or pickles for a classic Southern barbecue feast.
A splash of extra apple cider vinegar just before serving brightens the smoky flavors and creates authentic Carolina-style barbecue.
Store and Reheat
Store leftover pulled pork in an airtight container along with some of its cooking juices for up to 4 days in the refrigerator or freeze for up to 3 months. Reheat gently over low heat with a splash of broth or barbecue sauce to keep the pork moist.
Pulled pork often tastes even better the next day after the flavors have had time to meld together.
