Caramelize the Onions
Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add the sliced onion and a pinch of salt; cook, stirring occasionally, for 10–12 minutes until deeply golden and soft. If they begin to stick, add a splash of water. Reduce heat to low if needed.
Prepare the Tofu Base
While the onions cook, crumble the silken tofu into a bowl using your hands or a fork into irregular, bite-sized pieces. In a separate small bowl, whisk one whole egg plus one yolk (reserve the remaining white for another use) with a pinch of salt and pepper until frothy.
Combine and Cook
Push the caramelized onions to one side of the skillet, add the remaining 1 tablespoon olive oil, and the minced garlic (if using). Sauté for 30 seconds until fragrant, then add the diced tomatoes. Cook for 2 minutes until they start to soften. Add the crumbled tofu and turmeric (if using); stir to combine. Cook for 3–4 minutes, stirring occasionally, until the tofu is heated through.
