Serrano Ham Croquettes

Crispy breaded croquettes containing a rich béchamel filled with salty Serrano ham.

Ingredients

  • serrano ham finely chopped
  • butter
  • flour
  • milk
  • eggs beaten
  • breadcrumbs
  • frying oil

Instructions

  1. 1Melt butter, stir in flour, then gradually whisk in hot milk to make a very thick Béchamel.
  2. 2Stir in chopped ham, spread on a tray, and chill for 2 hours.
  3. 3Shape the chilled mixture into cylinders.
  4. 4Dredge in flour, dip in egg wash, coat with breadcrumbs, and fry until golden.
