Serrano Ham Croquettes
Crispy breaded croquettes containing a rich béchamel filled with salty Serrano ham.

- •butter
- •flour
- •milk
- •eggs beaten
- •breadcrumbs
- •frying oil
Instructions
- 1Melt butter, stir in flour, then gradually whisk in hot milk to make a very thick Béchamel.
- 2Stir in chopped ham, spread on a tray, and chill for 2 hours.
- 3Shape the chilled mixture into cylinders.
- 4Dredge in flour, dip in egg wash, coat with breadcrumbs, and fry until golden.
