Prepare the Coffee Mixture

Instant coffee works best because its concentrated crystals contain the soluble compounds needed to create the stable whipped foam. Regular brewed coffee will not whip properly.
Whip Until Fluffy
Using a hand whisk, electric mixer, or milk frother, whip the coffee mixture continuously until it becomes thick, glossy, and light caramel-colored. By hand this can take 8 to 12 minutes, while an electric mixer usually takes 2 to 4 minutes. The final texture should resemble a soft coffee mousse that holds its shape.
Prepare the Milk Base
Fill two serving glasses with ice cubes if making an iced version. Pour cold milk evenly between the glasses. For a warmer drink, gently heat the milk until warm but avoid boiling it.
