Rice Kheer (Pudding)
A traditional Indian rice pudding slow-cooked with milk, sugar, cardamom, and saffron.

- •basmati rice
- •whole milk
- •sugar
- •cardamom powder
- •saffron threads
- •slivered almonds and pistachios
Instructions
- 1Wash rice and soak in water for 20 minutes, then drain.
- 2Bring milk to a boil in a heavy pot, then stir in the soaked rice.
- 3Simmer on low heat for 20-25 minutes, stirring frequently, until rice is soft and milk is thick.
- 4Stir in sugar and saffron threads, cooking for another 5 minutes.
- 5Stir in cardamom powder, garnish with slivered nuts, and serve warm or chilled.
