Rice Kheer (Pudding)

A traditional Indian rice pudding slow-cooked with milk, sugar, cardamom, and saffron.

Ingredients

Provided

  • basmati rice
  • whole milk
  • sugar
  • cardamom powder
  • saffron threads
  • slivered almonds and pistachios

Instructions

  1. 1Wash rice and soak in water for 20 minutes, then drain.
  2. 2Bring milk to a boil in a heavy pot, then stir in the soaked rice.
  3. 3Simmer on low heat for 20-25 minutes, stirring frequently, until rice is soft and milk is thick.
  4. 4Stir in sugar and saffron threads, cooking for another 5 minutes.
  5. 5Stir in cardamom powder, garnish with slivered nuts, and serve warm or chilled.
