Ratatouille
A traditional French stewed vegetable dish containing zucchini, eggplant, peppers, and tomatoes.

- •canned crushed tomatoes

- •thyme and rosemary
Instructions
- 1Sauté chopped onion and garlic in olive oil, then pour crushed tomatoes and herbs to make a base sauce.
- 2Arrange alternating slices of zucchini, eggplant, and bell peppers in a spiral inside a baking dish.
- 3Drizzle with olive oil, salt, and pepper, and cover with parchment paper.
- 4Bake at 375°F (190°C) for 35 minutes until vegetables are tender.
