Ratatouille

A traditional French stewed vegetable dish containing zucchini, eggplant, peppers, and tomatoes.

Ingredients

  • eggplant sliced
  • zucchini sliced
  • bell peppers sliced
  • canned crushed tomatoes
  • onion chopped
  • garlic
  • thyme and rosemary

Instructions

  1. 1Sauté chopped onion and garlic in olive oil, then pour crushed tomatoes and herbs to make a base sauce.
  2. 2Arrange alternating slices of zucchini, eggplant, and bell peppers in a spiral inside a baking dish.
  3. 3Drizzle with olive oil, salt, and pepper, and cover with parchment paper.
  4. 4Bake at 375°F (190°C) for 35 minutes until vegetables are tender.
