Rasgulla

Instructions
- 1Bring milk to a boil, stir in lemon juice to curdle, strain, and wash with water to make fresh paneer/chhena.
- 2Knead the chhena thoroughly with heels of hands for 10 minutes until smooth and fat-free.
- 3Roll into small, crack-free balls.
- 4Boil sugar, water, and cardamom in a pot to make a light syrup.
- 5Add chhena balls to the boiling syrup, cover, and cook on medium-high heat for 15 minutes. Serve chilled.
