Rasgulla

Soft and spongy cottage cheese balls soaked in a light, sweet sugar syrup.

Ingredients

  • milk
  • lemon juice
  • sugar
  • water
  • cardamom pod
  • rose water

Instructions

  1. 1Bring milk to a boil, stir in lemon juice to curdle, strain, and wash with water to make fresh paneer/chhena.
  2. 2Knead the chhena thoroughly with heels of hands for 10 minutes until smooth and fat-free.
  3. 3Roll into small, crack-free balls.
  4. 4Boil sugar, water, and cardamom in a pot to make a light syrup.
  5. 5Add chhena balls to the boiling syrup, cover, and cook on medium-high heat for 15 minutes. Serve chilled.
