Pork Carnitas Tacos
Crispy, tender slow-cooked pork shredded and served in warm corn tortillas with chopped onion and cilantro.

- •pork shoulder cubed
- •lard or vegetable oil
- •orange juiced and rind kept
- •cinnamon stick
- •garlic cloves crushed
- •corn tortillas
- •white onion chopped
- •fresh cilantro
Instructions
- 1Simmer pork shoulder cubes in lard/oil with orange juice, orange rind, garlic, cinnamon, and salt in a heavy pot for 2-3 hours until tender.
- 2Remove pork, shred it, and place under an oven broiler for 5-8 minutes until edges are crispy.
- 3Warm corn tortillas on a flat comal.
- 4Fill tortillas with shredded pork carnitas.
- 5Top with chopped white onion, fresh cilantro, and fresh salsa.
