Ingredients

  • cooked cold jasmine rice
  • shrimp
  • pineapple chunks
  • curry powder
  • cashew nuts toasted
  • soy sauce
  • green onions

Instructions

  1. 1Sauté shrimp in a wok with oil; set aside.
  2. 2Sauté onion, pineapple chunks, and raisins in the wok.
  3. 3Add cold rice and sprinkle curry powder. Stir-fry on high heat.
  4. 4Stir in shrimp, cashew nuts, and soy sauce.
  5. 5Garnish with green onions and serve.
