Pho Beef Noodle Soup

Aromatic beef broth slow-simmered with star anise and cinnamon, served with rice noodles and thin sliced beef.

Ingredients

  • flat rice noodles
  • beef eye round thinly sliced raw
  • beef marrow bones
  • onion charred
  • ginger charred
  • star anise, cloves, cinnamon
  • fish sauce
  • bean sprouts, fresh basil, lime

Instructions

  1. 1Simmer beef bones in water for 3 hours (or pressure cook for 60 minutes) with charred onion, ginger, star anise, cloves, and cinnamon to make broth.
  2. 2Season broth with fish sauce and sugar; strain.
  3. 3Boil rice noodles and place in serving bowls.
  4. 4Top noodles with raw, paper-thin beef slices.
  5. 5Ladle boiling hot broth directly over the beef slices to cook them instantly. Garnish with basil, bean sprouts, and lime.
