Palak Paneer
Cubes of fresh paneer cheese cooked in a smooth, vibrant spinach gravy seasoned with garlic and cumin.

- •fresh spinach leaves
- •paneer cheese cubed
- •onion finely chopped
- •ginger-garlic paste
- •tomato chopped
- •green chilies
- •cumin seeds
- •garam masala
- •heavy cream
Instructions
- 1Blanch spinach leaves and green chilies in boiling water for 2 minutes, transfer to ice water to retain color, then blend into a smooth puree.
- 2Sauté cumin seeds, onions, and ginger-garlic paste in butter.
- 3Add chopped tomato and spices, simmer until soft, then pour in the spinach puree.
- 4Add paneer cheese cubes and simmer for 5 minutes.
- 5Stir in a splash of cream and serve hot with flatbread.
