Pajeon (Scallion Pancakes)

  • korean pancake mix (buchimgaru)
  • ice cold water
  • green scallion stalks cut in half
  • chili sliced
  • oil for frying

Instructions

  1. 1Whisk pancake mix and ice-cold water to make a thin batter.
  2. 2Heat a generous splash of oil in a pan.
  3. 3Lay scallion stalks side-by-side in the pan, then pour batter over them.
  4. 4Cook for 4-5 minutes until bottom is golden and crispy.
  5. 5Flip, press down, and fry for 3 minutes until crispy.
