Pad Thai
Stir-fried rice noodles with shrimp, tofu, scrambled eggs, bean sprouts, and crushed peanuts.

- •firm tofu cubed

- •tamarind paste
- •palm sugar
- •fish sauce
- •bean sprouts
- •peanuts crushed
Instructions
- 1Simmer tamarind paste, palm sugar, and fish sauce in a pan to make Pad Thai sauce.
- 2Sauté shrimp and tofu in a wok until cooked; set aside.
- 3Add noodles and Pad Thai sauce to the wok, tossing constantly until noodles are soft.
- 4Push noodles aside, scramble eggs in the wok, and toss with noodles.
- 5Stir in bean sprouts, serve hot, topped with crushed peanuts and lime.
