Pad Thai

Stir-fried rice noodles with shrimp, tofu, scrambled eggs, bean sprouts, and crushed peanuts.

Ingredients

  • flat rice noodles soaked
  • shrimp
  • firm tofu cubed
  • eggs
  • tamarind paste
  • palm sugar
  • fish sauce
  • bean sprouts
  • peanuts crushed

Instructions

  1. 1Simmer tamarind paste, palm sugar, and fish sauce in a pan to make Pad Thai sauce.
  2. 2Sauté shrimp and tofu in a wok until cooked; set aside.
  3. 3Add noodles and Pad Thai sauce to the wok, tossing constantly until noodles are soft.
  4. 4Push noodles aside, scramble eggs in the wok, and toss with noodles.
  5. 5Stir in bean sprouts, serve hot, topped with crushed peanuts and lime.
