Onion Bhaji (Pakora)
Crispy fried onion fritters spiced with turmeric, green chilies, and carom seeds, bound in chickpea flour.

Ingredients

- •red onions sliced thin
- •chickpea flour (besan)
- •rice flour (for crunch)
- •turmeric powder
- •chili powder
- •carom seeds (ajwain)
- •chopped cilantro
- •oil for frying
Instructions
- 1Toss sliced onions with salt and let sit for 10 minutes to draw out water.
- 2Add chickpea flour, rice flour, turmeric, chili powder, and carom seeds. Mix well without adding water; onion juice should bind the batter.
- 3Drop small, loose clumps of the onion mixture into hot oil (350°F/175°C).
- 4Fry for 3-4 minutes until golden brown and extremely crispy. Drain and serve hot.
