Onion Bhaji (Pakora)

Crispy fried onion fritters spiced with turmeric, green chilies, and carom seeds, bound in chickpea flour.

Ingredients

  • red onions sliced thin
  • chickpea flour (besan)
  • rice flour (for crunch)
  • turmeric powder
  • chili powder
  • carom seeds (ajwain)
  • chopped cilantro
  • oil for frying

Instructions

  1. 1Toss sliced onions with salt and let sit for 10 minutes to draw out water.
  2. 2Add chickpea flour, rice flour, turmeric, chili powder, and carom seeds. Mix well without adding water; onion juice should bind the batter.
  3. 3Drop small, loose clumps of the onion mixture into hot oil (350°F/175°C).
  4. 4Fry for 3-4 minutes until golden brown and extremely crispy. Drain and serve hot.
