Moussaka
Baked dish of layered eggplant, potatoes, spiced ground beef, and a thick, creamy béchamel topping.

- •eggplants sliced
- •potatoes sliced
- •ground beef
- •onion chopped
- •tomato sauce
- •cinnamon
- •butter and flour
- •milk for béchamel
- •Parmesan cheese
Instructions
- 1Brush eggplant and potato slices with oil and bake at 400°F for 15 minutes to soften.
- 2Sauté ground beef and onions, add tomato sauce, cinnamon, salt, and pepper; simmer for 20 minutes.
- 3Make Béchamel: cook butter and flour, whisk in milk until thick, then stir in egg yolk and grated cheese.
- 4Layer potatoes, eggplants, beef sauce, and top with Béchamel.
- 5Bake at 375°F (190°C) for 45 minutes until top is puffed and golden brown.
