Miso Soup

A traditional Japanese soup consisting of a dashi stock mixed with softened miso paste, tofu, and seaweed.

Ingredients

Provided

  • dashi stock (kelp and bonito broth)
  • miso paste (white or red)
  • firm tofu cubed
  • dried wakame seaweed
  • green onions sliced

Instructions

  1. 1Bring dashi stock to a gentle simmer in a pot.
  2. 2Rehydrate dried wakame seaweed in a separate bowl of water, then drain.
  3. 3Add cubed tofu and drained wakame to the simmering dashi.
  4. 4Place miso paste in a ladle, dissolve with a bit of hot dashi broth, and stir back into the pot.
  5. 5Turn off the heat immediately (do not boil miso as it destroys flavor). Garnish with green onions.
