Miso Soup
A traditional Japanese soup consisting of a dashi stock mixed with softened miso paste, tofu, and seaweed.

Ingredients

- •dashi stock (kelp and bonito broth)
- •miso paste (white or red)
- •firm tofu cubed
- •dried wakame seaweed
- •green onions sliced
Instructions
- 1Bring dashi stock to a gentle simmer in a pot.
- 2Rehydrate dried wakame seaweed in a separate bowl of water, then drain.
- 3Add cubed tofu and drained wakame to the simmering dashi.
- 4Place miso paste in a ladle, dissolve with a bit of hot dashi broth, and stir back into the pot.
- 5Turn off the heat immediately (do not boil miso as it destroys flavor). Garnish with green onions.
