Minestrone Soup
A thick Italian vegetable soup made with beans, onions, celery, carrots, stock, and tomatoes.

- •canned cannellini beans
- •canned diced tomatoes
- •vegetable stock
- •ditalini pasta
- •spinach
- •garlic
- •oregano
Instructions
- 1Sauté diced onion, carrots, celery, and minced garlic in olive oil until soft.
- 2Add diced tomatoes, vegetable stock, oregano, salt, and pepper. Bring to a boil.
- 3Stir in ditalini pasta and cook for 10 minutes.
- 4Stir in cannellini beans and spinach. Simmer for 5 minutes until spinach is wilted.
- 5Serve warm topped with grated Parmesan cheese.
