Minestrone Soup

A thick Italian vegetable soup made with beans, onions, celery, carrots, stock, and tomatoes.

Ingredients

  • carrots
  • celery
  • canned cannellini beans
  • canned diced tomatoes
  • vegetable stock
  • ditalini pasta
  • spinach
  • garlic
  • oregano

Instructions

  1. 1Sauté diced onion, carrots, celery, and minced garlic in olive oil until soft.
  2. 2Add diced tomatoes, vegetable stock, oregano, salt, and pepper. Bring to a boil.
  3. 3Stir in ditalini pasta and cook for 10 minutes.
  4. 4Stir in cannellini beans and spinach. Simmer for 5 minutes until spinach is wilted.
  5. 5Serve warm topped with grated Parmesan cheese.
