Mexican Churros

Crispy fried choux pastry rolled in cinnamon sugar, served with a warm spiced chocolate dip.

Ingredients

Provided

  • all-purpose flour
  • water
  • butter
  • eggs
  • sugar
  • cinnamon powder
  • frying oil
  • dark chocolate
  • heavy cream
  • chili powder or cinnamon

Instructions

  1. 1Boil water, butter, and salt. Stir in flour until a dough forms and pulls away from the sides.
  2. 2Let cool slightly, then beat in eggs one at a time until smooth and glossy.
  3. 3Transfer dough to a pastry bag with a star tip.
  4. 4Pipe 4-inch strips into hot oil (375°F/190°C) and fry for 3-4 minutes until golden.
  5. 5Drain and toss in cinnamon sugar.
  6. 6Make sauce: melt chocolate and cream together with a pinch of chili powder or cinnamon. Serve hot.
