Mexican Churros
Crispy fried choux pastry rolled in cinnamon sugar, served with a warm spiced chocolate dip.

- •butter
- •eggs
- •sugar
- •cinnamon powder
- •frying oil
- •dark chocolate
- •heavy cream
- •chili powder or cinnamon
Instructions
- 1Boil water, butter, and salt. Stir in flour until a dough forms and pulls away from the sides.
- 2Let cool slightly, then beat in eggs one at a time until smooth and glossy.
- 3Transfer dough to a pastry bag with a star tip.
- 4Pipe 4-inch strips into hot oil (375°F/190°C) and fry for 3-4 minutes until golden.
- 5Drain and toss in cinnamon sugar.
- 6Make sauce: melt chocolate and cream together with a pinch of chili powder or cinnamon. Serve hot.
