Matcha Green Tea Mochi

- •mochiko (glutinous rice flour)
- •ceremonial matcha powder
- •sugar
- •water
- •anko (sweet red bean paste)
- •cornstarch for dusting
Instructions
- 1Whisk mochiko, sugar, and matcha powder in a microwave-safe bowl. Gradually whisk in water until smooth.
- 2Cover and microwave for 2 minutes. Stir with a wet spatula, cover, and microwave for another 1 minute until sticky and translucent.
- 3Dust a board with cornstarch, roll out the hot mochi dough, and slice into circles.
- 4Place a scoop of red bean paste in the center of each circle, pinch the edges closed, and seal. Cool before serving.
