Matcha Green Tea Mochi

Matcha-flavored sweet, chewy rice cake treats.

Ingredients

  • mochiko (glutinous rice flour)
  • ceremonial matcha powder
  • sugar
  • water
  • anko (sweet red bean paste)
  • cornstarch for dusting

Instructions

  1. 1Whisk mochiko, sugar, and matcha powder in a microwave-safe bowl. Gradually whisk in water until smooth.
  2. 2Cover and microwave for 2 minutes. Stir with a wet spatula, cover, and microwave for another 1 minute until sticky and translucent.
  3. 3Dust a board with cornstarch, roll out the hot mochi dough, and slice into circles.
  4. 4Place a scoop of red bean paste in the center of each circle, pinch the edges closed, and seal. Cool before serving.
