Matcha Custard Purin

Chilled Japanese matcha pudding topped with a sweet caramel sauce.

Ingredients

  • matcha powder
  • milk
  • heavy cream
  • gelatin powder
  • sugar
  • water for caramel

Instructions

  1. 1Simmer sugar and water in a pan until it turns golden brown to make caramel. Pour into dessert cups.
  2. 2Whisk matcha, sugar, milk, and cream in a saucepan, heating gently until sugar dissolves.
  3. 3Stir in bloomed gelatin until completely dissolved, then strain.
  4. 4Pour the matcha custard into the caramel cups.
  5. 5Refrigerate for 4 hours until set, then invert onto plates.
