Matcha Custard Purin
Chilled Japanese matcha pudding topped with a sweet caramel sauce.

Instructions
- 1Simmer sugar and water in a pan until it turns golden brown to make caramel. Pour into dessert cups.
- 2Whisk matcha, sugar, milk, and cream in a saucepan, heating gently until sugar dissolves.
- 3Stir in bloomed gelatin until completely dissolved, then strain.
- 4Pour the matcha custard into the caramel cups.
- 5Refrigerate for 4 hours until set, then invert onto plates.
