Massaman Beef Curry

A rich, relatively mild Thai curry with potatoes, onions, and peanuts in a spiced coconut sauce.

Ingredients

  • beef chuck cubed
  • massaman curry paste
  • coconut milk
  • potatoes chunked
  • onion chunked
  • fish sauce
  • tamarind paste
  • roasted peanuts

Instructions

  1. 1Sauté Massaman curry paste in a pot with a splash of coconut cream.
  2. 2Add beef cubes and sear until browned on all sides.
  3. 3Stir in remaining coconut milk, potatoes, onion, and peanuts.
  4. 4Simmer on low for 35 minutes until beef and potatoes are tender.
  5. 5Stir in fish sauce, tamarind paste, and a pinch of palm sugar.
