Hot and Sour Soup

A fiery Szechuan soup with silken tofu, bamboo shoots, and mushrooms in a vinegar-white pepper broth.

Ingredients

  • chicken stock
  • tofu sliced into matchsticks
  • bamboo shoots sliced
  • wood ear mushrooms
  • soy sauce
  • black vinegar
  • white pepper
  • cornstarch
  • egg beaten

Instructions

  1. 1Bring chicken stock, soy sauce, bamboo shoots, and mushrooms to a simmer.
  2. 2Stir in matchstick-cut tofu.
  3. 3Thicken soup slightly with cornstarch slurry.
  4. 4Drizzle in beaten egg to form thin ribbons.
  5. 5Stir in black vinegar, white pepper, and sesame oil just before serving. Garnish with green onions.
