Green Curry Chicken

  • chicken breast sliced
  • green curry paste
  • coconut milk
  • bamboo shoots
  • thai eggplants
  • fish sauce
  • palm sugar
  • basil leaves

Instructions

  1. 1Sauté green curry paste in a pot with a splash of coconut cream until aromatic.
  2. 2Gradually stir in chicken slices and cook for 3 minutes.
  3. 3Add remaining coconut milk, eggplants, and bamboo shoots; simmer for 10 minutes.
  4. 4Season with fish sauce and palm sugar. Garnish with fresh basil leaves.
