Green Curry Chicken

- •bamboo shoots
- •thai eggplants
- •fish sauce
- •palm sugar
- •basil leaves
Instructions
- 1Sauté green curry paste in a pot with a splash of coconut cream until aromatic.
- 2Gradually stir in chicken slices and cook for 3 minutes.
- 3Add remaining coconut milk, eggplants, and bamboo shoots; simmer for 10 minutes.
- 4Season with fish sauce and palm sugar. Garnish with fresh basil leaves.
