Greek Lemon Potatoes

Roasted potato wedges flavored with fresh lemon juice, garlic, olive oil, and oregano.

  • russet potatoes cut in wedges
  • lemon juice
  • chicken broth
  • olive oil
  • garlic minced
  • oregano

Instructions

  1. 1Toss potato wedges with olive oil, lemon juice, minced garlic, oregano, and salt.
  2. 2Place potato wedges in a baking pan.
  3. 3Pour chicken broth into the bottom of the pan to keep potatoes moist.
  4. 4Roast at 400°F (200°C) for 30-35 minutes, turning once, until crispy outside and soft inside.
