Gougeres (Cheese Puffs)

Puffy, airy baked choux pastry bites flavored with Gruyere cheese.

Ingredients

  • water
  • unsalted butter
  • all-purpose flour
  • eggs
  • Gruyere cheese grated
  • ground nutmeg

Instructions

  1. 1Boil water, butter, and salt in a pan. Stir in flour all at once until a smooth dough forms.
  2. 2Cool slightly, then beat in eggs one at a time until dough is smooth and glossy.
  3. 3Fold in grated Gruyere cheese and nutmeg.
  4. 4Drop rounded tablespoons of batter onto baking sheets.
  5. 5Bake at 400°F (200°C) for 20 minutes until puffed and golden.
