German Spaetzle Noodles
Hand-scraped tiny egg noodles sautéed in butter with Gruyere cheese.

- •eggs
- •milk or water
- •butter
- •Gruyere cheese grated
- •ground nutmeg
Instructions
- 1Whisk flour, eggs, milk, nutmeg, and salt to make a wet sticky batter.
- 2Press batter through a spaetzle maker (or colander with large holes) into boiling water.
- 3Cook for 2 minutes until noodles float, then drain.
- 4Sauté noodles in butter in a hot pan, stir in Gruyere cheese until melted.
