German Potato Salad

Sliced boiled potatoes tossed in a warm bacon-vinegar dressing.

Ingredients

  • potatoes sliced
  • bacon diced
  • onion chopped
  • white vinegar
  • sugar
  • beef broth
  • parsley

Instructions

  1. 1Boil sliced potatoes until tender; drain.
  2. 2Fry bacon in a pan until crispy; remove bacon.
  3. 3Sauté onion in the bacon fat, add vinegar, sugar, water, and beef broth; bring to a boil.
  4. 4Toss potatoes in the warm dressing, top with bacon and parsley, and serve warm.
