Gambas al Ajillo (Garlic Shrimp)

  • shrimp peeled
  • garlic cloves sliced
  • extra virgin olive oil
  • red pepper flakes
  • dry sherry
  • fresh parsley

Instructions

  1. 1Heat a generous amount of olive oil in a heavy clay dish or skillet.
  2. 2Add sliced garlic and red pepper flakes, cook until garlic starts to golden.
  3. 3Add shrimp and cook for 2 minutes per side until pink.
  4. 4Splash with dry sherry, cook for 1 minute, and serve bubbling, topped with parsley.
