Fresh Summer Rolls

Chilled rice paper rolls wrapped with shrimp, fresh herbs, lettuce, and rice vermicelli.

Ingredients

Provided

  • rice paper wrappers
  • cooked shrimp halved
  • rice vermicelli noodles cooked
  • fresh mint and cilantro
  • lettuce leaves
  • peanut dipping sauce

Instructions

  1. 1Dip a rice paper sheet in warm water for 5 seconds to soften.
  2. 2Lay paper flat, place lettuce, herbs, and noodles on the bottom half.
  3. 3Place three shrimp halves pink-side down on the top half.
  4. 4Fold the sides in and roll tightly from bottom to top.
  5. 5Serve chilled with peanut dipping sauce.
