Fresh Summer Rolls
Chilled rice paper rolls wrapped with shrimp, fresh herbs, lettuce, and rice vermicelli.

- •rice paper wrappers
- •cooked shrimp halved
- •rice vermicelli noodles cooked
- •fresh mint and cilantro
- •lettuce leaves
- •peanut dipping sauce
Instructions
- 1Dip a rice paper sheet in warm water for 5 seconds to soften.
- 2Lay paper flat, place lettuce, herbs, and noodles on the bottom half.
- 3Place three shrimp halves pink-side down on the top half.
- 4Fold the sides in and roll tightly from bottom to top.
- 5Serve chilled with peanut dipping sauce.
