French Onion Soup

Slow-caramelized yellow onions simmered in a rich beef broth and white wine, topped with toasted baguette and melted Gruyere.

  • yellow onions thinly sliced
  • beef stock
  • dry white wine
  • french baguette slices
  • Gruyere cheese grated
  • butter
  • thyme sprigs
  • garlic

Instructions

  1. 1Melt butter in a heavy-bottomed pot and caramelize onions slowly on low heat for 30 minutes until deep brown and sweet.
  2. 2Deglaze the pan with white wine, scraping up the browned bits.
  3. 3Add beef stock and thyme, simmer for 15 minutes.
  4. 4Ladle soup into oven-safe bowls, place a toasted baguette slice on top, cover with Gruyere, and broil until golden and bubbling.
