Grilled sweet corn on the cob slathered in mayonnaise, cotija cheese, chili powder, and lime.

  • mayonnaise
  • cotija cheese crumbled
  • chili powder
  • lime wedges
  • fresh cilantro
  • garlic powder

Instructions

  1. 1Grill corn on the cob over medium-high heat for 8-10 minutes, turning frequently until lightly charred.
  2. 2Brush each cob generously with a layer of mayonnaise.
  3. 3Roll the corn in crumbled cotija cheese until fully coated.
  4. 4Dust with chili powder and a pinch of garlic powder.
  5. 5Garnish with chopped cilantro and serve hot with lime wedges.
