Dorayaki
Pancake-like confections sandwiching a sweet red bean paste filling.

- •eggs
- •sugar
- •honey
- •baking soda
- •water
- •anko (sweet red bean paste)
Instructions
- 1Whisk eggs, sugar, and honey until pale. Dissolve baking soda in a tablespoon of water and whisk into eggs.
- 2Sift in flour and whisk. Let batter rest for 15 minutes, then add a tablespoon of water to adjust consistency.
- 3Pour small rounds of batter onto a hot non-stick pan, flip when bubbles form (approx. 70 seconds), and cook the other side for 30 seconds.
- 4Assemble by spreading sweet red bean paste between two pancake discs. Wrap in plastic wrap to keep moist.
