Dorayaki

Pancake-like confections sandwiching a sweet red bean paste filling.

Ingredients

  • all-purpose flour
  • eggs
  • sugar
  • honey
  • baking soda
  • water
  • anko (sweet red bean paste)

Instructions

  1. 1Whisk eggs, sugar, and honey until pale. Dissolve baking soda in a tablespoon of water and whisk into eggs.
  2. 2Sift in flour and whisk. Let batter rest for 15 minutes, then add a tablespoon of water to adjust consistency.
  3. 3Pour small rounds of batter onto a hot non-stick pan, flip when bubbles form (approx. 70 seconds), and cook the other side for 30 seconds.
  4. 4Assemble by spreading sweet red bean paste between two pancake discs. Wrap in plastic wrap to keep moist.
