Crispy Vietnamese Spring Rolls

Crispy fried spring rolls filled with pork, wood ear mushrooms, and glass noodles.

Ingredients

  • rice paper or wheat wrappers
  • ground pork
  • wood ear mushrooms soaked and chopped
  • glass noodles chopped
  • eggs
  • shallots
  • fish sauce
  • frying oil

Instructions

  1. 1Mix ground pork, chopped mushrooms, glass noodles, minced shallots, egg, and fish sauce.
  2. 2Wrap filling inside wrappers and roll tightly.
  3. 3Deep fry in medium-hot oil for 6-8 minutes until golden and crispy.
  4. 4Serve warm wrapped in lettuce leaves with nuoc cham dipping sauce.
