Crispy Vietnamese Spring Rolls
Crispy fried spring rolls filled with pork, wood ear mushrooms, and glass noodles.

- •rice paper or wheat wrappers
- •ground pork
- •wood ear mushrooms soaked and chopped
- •glass noodles chopped
- •eggs
- •shallots
- •fish sauce
- •frying oil
Instructions
- 1Mix ground pork, chopped mushrooms, glass noodles, minced shallots, egg, and fish sauce.
- 2Wrap filling inside wrappers and roll tightly.
- 3Deep fry in medium-hot oil for 6-8 minutes until golden and crispy.
- 4Serve warm wrapped in lettuce leaves with nuoc cham dipping sauce.
