Coconut Tapioca Pudding

Sweet tapioca pearls cooked with coconut milk and sweet corn.

  • tapioca pearls
  • coconut milk
  • sugar
  • sweet corn kernels
  • salt

Instructions

  1. 1Boil tapioca pearls in water for 10-12 minutes until translucent; drain and rinse.
  2. 2Simmer coconut milk, sugar, and a pinch of salt in a pot.
  3. 3Stir in the cooked tapioca and sweet corn.
  4. 4Simmer on low for 3 minutes, then cool and serve.
