Coconut Tapioca Pudding
Sweet tapioca pearls cooked with coconut milk and sweet corn.

Instructions
- 1Boil tapioca pearls in water for 10-12 minutes until translucent; drain and rinse.
- 2Simmer coconut milk, sugar, and a pinch of salt in a pot.
- 3Stir in the cooked tapioca and sweet corn.
- 4Simmer on low for 3 minutes, then cool and serve.
