Classic Crème Brûlée

- •hot water for water bath
Instructions
- 1Heat cream and scraped vanilla bean until hot, then let cool slightly.
- 2Whisk egg yolks and sugar. Slowly whisk the warm cream into the egg mixture.
- 3Pour into ramekins, place in a baking pan filled with hot water, and bake at 325°F (160°C) for 35-40 minutes.
- 4Chill for 4 hours, sprinkle sugar on top, and caramelize with a blowtorch before serving.
