Classic Crème Brûlée

A rich, creamy vanilla custard base topped with a contrasting, glass-like layer of caramelized sugar.

Ingredients

Provided

  • heavy cream
  • egg yolks
  • sugar
  • vanilla bean scraped
  • hot water for water bath

Instructions

  1. 1Heat cream and scraped vanilla bean until hot, then let cool slightly.
  2. 2Whisk egg yolks and sugar. Slowly whisk the warm cream into the egg mixture.
  3. 3Pour into ramekins, place in a baking pan filled with hot water, and bake at 325°F (160°C) for 35-40 minutes.
  4. 4Chill for 4 hours, sprinkle sugar on top, and caramelize with a blowtorch before serving.
