Classic Chocolate Eclairs

Choux pastry shells piped with sweet vanilla pastry cream and topped with a glossy dark chocolate glaze.

Ingredients

Provided

  • choux pastry shells
  • milk
  • egg yolks
  • sugar
  • cornstarch
  • dark chocolate
  • heavy cream

Instructions

  1. 1Whisk egg yolks, sugar, and cornstarch, then pour into hot milk, simmering until thick to make pastry cream. Chill.
  2. 2Poke a small hole in each baked choux shell.
  3. 3Pipe the chilled pastry cream into the shells until full.
  4. 4Melt dark chocolate and cream together to make a smooth glaze.
  5. 5Dip the top of each eclair in the warm chocolate glaze and let set.
