Classic Chocolate Eclairs
Choux pastry shells piped with sweet vanilla pastry cream and topped with a glossy dark chocolate glaze.

- •milk
- •egg yolks
- •sugar
- •cornstarch
- •dark chocolate
- •heavy cream
Instructions
- 1Whisk egg yolks, sugar, and cornstarch, then pour into hot milk, simmering until thick to make pastry cream. Chill.
- 2Poke a small hole in each baked choux shell.
- 3Pipe the chilled pastry cream into the shells until full.
- 4Melt dark chocolate and cream together to make a smooth glaze.
- 5Dip the top of each eclair in the warm chocolate glaze and let set.
