Classic Beef Barbacoa

Beef slow-braised in a spicy, aromatic chipotle pepper broth until shredding-tender.

Ingredients

  • beef chuck roast cubed
  • chipotle pepper in adobo sauce
  • lime juice
  • apple cider vinegar
  • garlic cloves
  • oregano
  • beef broth
  • cumin

Instructions

  1. 1Blend chipotle peppers, garlic, lime juice, vinegar, cumin, oregano, and salt to make a paste.
  2. 2Sauté beef cubes in oil in a Dutch oven until browned on all sides.
  3. 3Pour the chipotle paste and beef broth over the beef.
  4. 4Cover and simmer on low for 3 hours (or pressure cook for 60 minutes) until beef shreds easily with a fork.
  5. 5Shred the beef inside the cooking juices before serving.
