Classic Beef Barbacoa

- •beef chuck roast cubed
- •chipotle pepper in adobo sauce
- •lime juice
- •apple cider vinegar
- •garlic cloves
- •oregano
- •beef broth
- •cumin
Instructions
- 1Blend chipotle peppers, garlic, lime juice, vinegar, cumin, oregano, and salt to make a paste.
- 2Sauté beef cubes in oil in a Dutch oven until browned on all sides.
- 3Pour the chipotle paste and beef broth over the beef.
- 4Cover and simmer on low for 3 hours (or pressure cook for 60 minutes) until beef shreds easily with a fork.
- 5Shred the beef inside the cooking juices before serving.
